Microwave Peanut Brittle

I posted this recipe originally in 2009.  I made it recently using a different microwave and totally burned it!  I made three batches of this over the weekend with some reduced times in the microwave and it turned out perfect. (Updated on 12/14/15)

Who knew you could make peanut brittle in the microwave?  So easy!  No candy thermometer or lots of stirring required!  It only takes about 6 minutes!  Easy peasy!

The original recipe called for 7.5 minutes of microwave cooking time total, which I found can be too long depending on your microwave.  I reduced the second cooking time from 3.5 minutes to 1 minute and it worked out great.  Just make sure you stick close to your microwave.  You don't want to burn it (or you'll have very DARK peanut brittle...yucky!).

Oh, and don't stick your HOT bowl into the sink or run water on it.  It just might crack like mine did a few years ago.

  • 1 c. granulated sugar
  • 1/2 c. light corn syrup
  • 1 c. salted peanuts
  • 1 teaspoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • a little extra butter for greasing pan
  1. Lightly butter a cookie sheet. 
  2. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 3 1/2 minutes. 
  3. Stir in peanuts and microwave on high for 1 minute more.
  4. Stir in butter and vanilla and microwave for 1 minute. (WATCH the microwave closely. You DON'T want it to turn brown while cooking.) The sugar mixture will turn a little brown when you add the vanilla.
  5. Stir in baking soda until light and foamy. 
  6. Pour onto cookie sheet and tip the pan to spread thin. 
  7. Cool completely and break into pieces.

Week 394 Menu

Hi there!  This week is flying by!  So excited that we've been having blue skies and warmer weather.  Our snow is almost all melted and little bulbs are sprouting in the flower beds.  However, we had our 10th snow/ice day last week!!!  Hopefully it was the last one. Don't like your house to smell like food? I've got a kitchen tip for that!

I have a smallish, one story house and if I cook food that is kind of smelly, like onions, the smell tends to linger in every room.  This is a pet peeve of mine and (also my husband's).  Over the years I've found a few ways to cook smelly food without smelling up the kitchen. Use your garage!   I use my garage quite often to cook things in.  I open the window and it airs out, especially when you open the garage door.  I'm sure my neighbors wonder what I'm cooking. I've used two different kitchen appliances in the garage:  my crockpot and my food dehydrator. Crockpot - I did this very thing today since I'm simmering chicken, onions, carrots and celery to make chicken noodle soup tonight.  I don't want my house to smell like onions all day, so I plugged it in on my husband's workbench.   Food dehydrator - when I make jerky, I plug the food dehydrator in in the garage.  I don't really want my house to smell like meat for hours
